Bens chutney recipie


Ingredients
570ml/1 pint malt vinegar
450g/1lb soft brown sugar
300g/11oz sultanas
2kg/4lb 4oz ripe red tomatoes, cut into 6 or 8 pieces
500g/1lb 2oz green apples, peeled and chopped
400g/14oz shallots, peeled and roughly chopped
4 red chillies, chopped
1 tbsp root ginger, finely chopped
sea salt and freshly ground black pepper

Method
1. Place the vinegar and sugar in a large saucepan and bring to the boil. Cook for three to four minutes until the sugar has melted.
2. Add the sultanas and cook until just reduced.
3. Add all the other ingredients, bring to the boil and cook for about 20 to 30 minutes, stirring frequently.
4. Leave the chutney with a chunky texture and not too cooked as that will cause it to be a purée.
5. Cool the chutney, place into sterilised jars and store for two to three weeks in the fridge.
6. Take to your next cabinet meeting.............

Tips (some only good for Boscombe residents!)
* Green chillis add a bit of colour.
* I don't much like runny chutney, so its a big challenge to reduce it down so its really thick. This time, I decanted the surplus liquid into a small pan and boiled it down that way. You're less likely to end up with burnt chutney that way.
* It'll reduce down by about half. Check you have enough jar capacity by half filling your chutney pan with water and decanting.
* Other recipes use raisins instead of sultanas
* Malt vinegar can be bought in large quantities from Sainsbury.
* The fancy jar in the photo was a quid from TJ Hughes. Top floor, far corner, next to the pots and pans.
* Wash the jars, and then sterilise them and their lids in the oven (on trays) at ~130 degrees. Including the fancy one with the rubber seal. Otherwise it'll all rot. I then fill them while they're hot, and seal them up.
* The pop-up buttons get sucked down when the chutney cools. Thats what the loud bangs are.
* The BBC has a recipe search feature, which is where I found it. Apple, date, and ginger sounds interesting.
* Only give it to friends. (I didn't leave a jar with the Leader of the Council!)
